This work in 'Cashew & Tamarind' blends the cream of fresh cashews with the deep colour of aged tamarind. Both ingredients are added to many Indian dishes but for different reasons. Tamarind is used in to add a sour flavor to many dishes whereas Cashew increases the creaminess and texture. "
